While avocados are one of the best fruits for a keto diet , they’re also one of the most temperamental: Slicing into one too early or too late can lead to rock-hard fruit or a brown, gooey mess. Save the stress and learn how to freeze avocados at their optimal ripeness instead, so you’ll never have to deal with a mushy avocado again! This guide goes over all the best methods for freezing avocado, thawing guidelines, and recipes for frozen avocado.

If you’re looking for more keto friendly foods to freeze, check out my index of hundreds of freezer friendly keto recipes . Or, see these healthy avocado recipes for ways to use your preserved fruit.

Can You Freeze Avocados?

Can avocados be frozen? Absolutely — and once you learn how to freeze avocados, you’ll be able to stock up when they’re on sale and keep them on hand whenever you need a boost of healthy fats.

If you’re wondering, “can avocado freeze well?”, it can… as long as you use the right methods to prevent browning.

Can you freeze whole avocados?

Yes, and even though it’s not my favorite, this method is one of the easiest ways to preserve them. See the method below!

How To Freeze Avocados

Make frozen avocado in four different ways, using these four easy methods.

Method 1: Freezing Avocado Slices Or Chunks

Frozen avocado chunks and slices are ideal if you want to mash them up after thawing. And they won’t go brown! Here’s how to do it:

  • Cut. After halving your avocado and removing the pit, create long slices across the length of each avocado half. (Stop here for freezing avocado slices, or slice again across the width to create chunks.) Scoop out with a spoon.
Avocado slices inside avocado skin - 3 Avocado slices inside avocado skin - 4
  • Toss. Add avocado pieces to a bowl and toss with 1-2 tsp lemon juice (depending on the size of the avocado), which prevents browning.
Avocado slices in a bowl with lemon juice - 5 Avocado slices in a bowl with lemon juice - 6
  • Seal & freeze. Place slices or chunks into a bag, then use a vacuum sealer to suck the air out and seal. Freeze.

Method 2: Freezing Avocado Puree For Smoothies

Can you freeze avocado puree? Most definitely. It’s great for blended recipes!

  • Mash. Add avocado flesh and 1-2 tsp lemon juice to a bowl and mash with a fork, or use a high-powered blender to puree.
Mashed avocado in glass bowl - 9 Mashed avocado in glass bowl - 10
  • Transfer. Add avocado puree to an ice cube tray. I like this silicone ice cube tray most of the time, but I also have a plastic one shown below.

  • Freeze. Place in the freezer to set.

Method 3: Freezing Avocados Whole

Can I freeze avocado without any prep work? YES! Freezing avocado with the skin on is the easiest way to preserve it.

How do you do it? When your avocado is perfectly ripe (this is key!), just put it in the freezer. That’s it!

FYI: This method is slightly more prone to browning than others. The water content in the avocado can shift a bit when frozen, so sometimes they come out brown afterward. But other times, they are fine. If you’re in a rush and you know your avocado is about to go bad, you might as well try it instead of letting it spoil.

Method 4: Freezing Guacamole

Can you freeze guacamole ? Absolutely. Guacamole freezes well, just like pureed avocado:

  • Mash. Mash up your guacamole, incorporating a generous amount of lime juice to prevent browning.
Mashed guacamole in glass bowl - 17 Mashed guacamole in glass bowl - 18
  • Freeze. Add guacamole to a 1-quart freezer bag and push out the air. Lay flat in the freezer until set.

How To Thaw Frozen Avocado

So, you have frozen avocado chunks, puree, or whole fruit — how to you un-freeze it? It’s easy!

How to thaw frozen avocado chunks, slices, or puree:

Remove pieces from the freezer and thaw at room temperature for 30-60 minutes. You can also place in the refrigerator overnight.

FYI: Even though avocado chunks or slices can be frozen, I don’t recommend using them in this form after thawing. The texture will change, making them not the most ideal for something like a salad. You can try it to see for yourself if you like the texture, but I prefer avocado in mashed form after it has been frozen.

How to thaw frozen whole avocado:

Briefly rinse the whole avocado under hot water, then thaw on the counter for about 1 hour. If you have more time, you can also thaw the whole fruit in the refrigerator overnight.

How to thaw frozen guacamole:

Thaw frozen guacamole overnight in the refrigerator, or immerse the bag in cold water for 30-40 minutes.

What To Do With Frozen Avocado

Since the texture of the fruit can change after freezing, the best frozen avocado recipes incorporate other flavors and textures, too.

  • Smoothies – Can you freeze avocados for smoothies? It’s a great idea! Add to a strawberry avocado smoothie , Vietnamese avocado smoothie , or triple berry smoothie (from my keto cookbook !)
  • Sandwiches – Use thawed avocado slices or mashed avocado chunks in sandwiches, such as avocado toast on keto bread or a BLT.
  • Dips – Spice up your thawed avocado by adding it to homemade guacamole or salsa verde .
  • Mashed salads – Mix avocado chunks into satisfying lettuce-free salads, such as avocado egg salad , chicken salad , or tuna salad .
  • Desserts – Try frozen avocado in sweet treats like key lime pie and avocado brownies !

Why not use thawed avocado in traditional salad recipes? Since these dishes call for whole chunks of avocado, the texture change is more apparent and not as appetizing. It’s much better to use frozen avocado in recipes that don’t rely on its classic creamy texture.

Conclusion: What Is The Best Way To Freeze Avocado?

Now that you know how to freeze avocados and how to use frozen avocado, which method is best? It depends on how you want to use your avocado afterward. For easier blending and a little extra citrus flavor, freeze avocado pieces or puree. For no flavor change, freeze them whole instead.

The Basic Keto Meal Formula

Eating keto doesn’t have to be complicated! While there are plenty of delicious easy keto recipes to choose from, you don’t even have to cook from a recipe to get started.

Simply follow the keto cheat sheet formula of protein + veggie + fat for your meals.

Be sure to choose a moderate amount of protein, only low carb vegetables (mostly ones that grow above ground), and generous fat to attain an optimal macro ratio. That’s approximately 60-75% of calories from fat, 20-25% protein, and 5-10% from carbohydrates. The table below will give you ideas for what to choose.

Pick A ProteinPick A VeggieAdd Fat
Beef Chicken Pork Eggs Lamb Turkey Fish Shellfish Protein powder VenisonCauliflower Broccoli Zucchini Leafy Greens Cucumbers Brussels Sprouts Cabbage Asparagus Radishes Bell Peppers Jicama CeleryButter Avocado Oil Cheese Bacon Avocado Lard Ghee Mayo Nuts MCT Oil

Understanding Macros

Macros are macronutrients for short. They include fat, protein, and carbohydrates.

You can calculate your own macros using the macro calculator , but the macro keto cheat sheet below will explain how to look at macros when following a keto lifestyle.

Carbs Are A Limit.

Keeping carbs low is what gets you into ketosis and keeps you there. Ketosis means that you’re using fat as your primary energy source instead of sugar, and requires keeping carbs very low.

A good starting point is 20-25 grams net carbs per day, but you can experiment after a few weeks to see if your body stays in ketosis at higher levels. People who are very active may be able to do more and stay in ketosis, up to around 50 grams per day.

“Carbs are a limit” means that you set a limit for how many carbs to eat per day and don’t exceed it. You don’t have to hit that limit, so if you’re under that’s okay, just don’t go over. Ideally most of your carbs would come from low carb vegetables, and if you’re eating enough veggies, you’ll usually get close to the limit naturally.

A common misconception is that reaching ketosis requires a certain macro ratio, but it’s really only restricting your carb intake that gets you there [ * ]. In the absence of sufficient carbs to use as energy, the body will switch to using fat as fuel. This is called the metabolic state of ketosis.

Protein Is A Goal.

Protein is made up of amino acids, the building blocks of all our cells. It’s a crucial for keeping our muscles strong and for many cellular functions [ * ].

“Protein is a goal” means that you always want to eat enough protein to reach the goal each day, but not exceed it too much. You want enough for your needs, but excess protein can trigger gluconeogenesis, which is protein being converted to sugar [ * ] and can kick you out of ketosis.

Fat Is A Lever.

Fat is the primary macronutrient in a keto lifestyle, because being in ketosis means that fat is your primary fuel source. Fat as a fuel source will come from your food, and if you are losing weight, from your body.

A big advantage of a keto lifestyle is the high fat intake. It keeps you full and satisfied, making it easier to stick to, and using it as the primary fuel source makes it easier on your body to burn body fat, with a lower chance of breaking down your muscle (provided you get enough protein).

Aside from reaching your protein goal and limiting your carbs, the remainder of your calories on a keto diet comes from fat.

Don’t fear fat – it’s your main energy source on keto, and getting enough of it trains your body to use fat for fuel instead of sugar. That means that as long as you are not overdoing your overall calorie intake, you’ll efficiently burn your body fat for fuel as well.

“Fat is a lever” means that you can increase or decrease your fat intake depending on your goals and hunger levels. Increase it (along with exercise) to gain muscle, or decrease it to lose weight.

Keto Food Swaps

One of my favorite challenges is creating recipes, or just discovering, keto food swaps. These are delicious keto replacements for traditionally high-carb or high-sugar foods.

Electrolyte Basics

Getting enough electrolytes is crucial for anyone, but especially so on a keto diet. The reason is that ketosis has a diuretic effect, which increases excretion of water and electrolytes, especially sodium [ * ]. This is often the cause of the keto flu.

For more details on electrolytes and avoiding keto flu, check out the full keto flu guide here .

The important thing to know about electrolytes is that replenishing them will keep keto flu away and keep your body functioning well. I always recommend an electrolyte drink and whole food sources of anything your body needs before resorting to supplements, so I made a list of what to eat to get each of the 3 major electrolytes – sodium, magnesium and potassium.

Here’s your keto diet cheat sheet for getting electrolytes from food:

SodiumMagnesiumPotassium
Bone broth Boullion cubes Bacon Salted nuts PicklesSeaweed Seeds Nuts Avocado Leafy greensPotassium chloride Avocado Bone broth Spinach Broccoli Mushrooms Beef Pork

Keto Diet Types

People follow a keto lifestyle for different reasons. Some do it just to lose weight, others are after better overall health, increased energy, and reduced inflammation.

Strictly speaking, the defining factor of a keto diet is the metabolic state of ketosis, which is achieved by restricting carbs. However, many people (myself included) also reduce or eliminate processed, inflammatory, or low-nutrient foods.

Below is your keto cheat sheet summary of the different ways that people follow keto. You choose what works best for your goals and lifestyle!

  • Strict Keto – Up to 20-30g net carbs daily, count all calories and macros, and eat clean, unprocessed foods.
  • Lazy Keto – Up to 20-30g net carbs daily, and track only net carbs OR eat keto foods without tracking.
  • Dirty Keto – Up to 20-30g net carbs daily, with “if it fits your macros” approach including processed foods.
  • Low Carb – Up to 50-100g net carbs daily, less strict.
